How to make Coffee with Plant Milk - without it curdling!

One of the most annoying things about being vegan is coffee. No seriously, it is.

As an adult, you take for granted the fact that you can make your own instant coffee. It's not hard is it? Well...

I've lost count of the number of cups I've had to throw away because the soya milk curdled.

Plant milks, and I mostly drink soya, have a nasty habit of curdling in hot coffee and you really can't drink it once that has happened - seriously, don't, it's gross. It looks bad, tastes sour and gives you indigestion.

I made it my mission to find a method to make instant coffee at home without the curdling, and I'm going to share my secrets with you today.

How to make perfect instant coffee with plant milk

Put your instant coffee, preferred sugar and plant milk into your mug.

Note: It's important that you use a microwave proof mug for this. No fancy gilt edged nonsense - metal is not allowed in the microwave!

You can give it a stir if the coffee is sat on top and isn't dissolving into the milk.

Non organic milk tends to work better than organic for some reason. I have no idea why. (Nature is cruel.)

If you've been previously traumatized by curdling coffee (I'm thinking about setting up a support group) and want to be extra-safe, I recommend using a plant milk such as Alpro Professional. Professional plant milks are usually designed for baristas, so it's more stable than average and even less likely to curdle.

Pop your mug in the microwave and nuke on high for 30-40 seconds depending on how much milk you're using. I like my coffee milky, so it's normally 40 for mine.

Remove from the microwave and stir.

Add freshly boiled water that has been allowed to cool slightly and stir constantly while pouring.

Continue to stir like mad.

Stir some more and hold back the tears.

Send up prayers to the coffee angels and any suitable deities you can think of.

Stop stirring and stare intently at the coffee while appealing to higher powers.

Remember to blink.

Stare until you're sure it's not curdling.

Give it another stir and stare suspiciously, just to make sure it's not playing a cruel trick on you.

Take a deep sigh of relief and enjoy your perfect cuppa.
