Easy Peanut Butter Chocolate Chip Cookies (Vegan, Wheat & Gluten free option)

I still can't believe that I haven't posted this recipe on here until today! I was searching for this recipe to make a batch for myself today, having recently discovered that I'm able to eat organic wheat flours, and I realised that it's actually some time since I made these.  Here's a batch I made in 2014 before I came up with the genius idea of adding chocolate chips ^_^ Up until recently, I've been sticking to the tummy friendly coconut flour version of this recipe (which I will post very soon too) which is also delicious even for those who aren't wheat or gluten free! This is one of my go to recipes at the end of the month when I'm running out of food and fancy a little treat. The peanut butter could be substituted with another nut butter if you prefer, and you can mix it up a bit by adding chopped nuts, replacing the chocolate chips with sultanas or anything else you have left in the store cupboard. Go wild and use whatever you fancy!

For new & budding vegans, it can be hard to get support if you find that people around you aren't interested in or worse actively oppose your new dietary & lifestyle choices.  I've found that YouTube can be a very useful place for inspiration, recipes and a bit of camaraderie, but it can also be a toxic mix of bad advice, attention seekers, hysteria and hypocrisy. I've spent a few good years sorting the wheat from the chaff, so as it's Veganuary and I know there are lots of new vegans out there looking for good resources, I'm going to share my favourite Vegan YouTube channels. It's 1st January and along with many other New Years Resolutions that seem hard or even impossible to achieve, I'm aware that lots of people - probably more than ever before are taking on the Veganuary Challenge. Now you'd think that as a vegan I'd be all for this, and one the one hand I am. But I can also see how this challenge can bit a bit too...er challenging? When I went 100% vegan in September 2012, I'd already switched to a vegetarian diet in the January before that and quit dairy shortly afterwards. Going vegan for me took some time, and I didn't have the money or desire to throw out everything that would be considered "non-vegan" as that would have been more than I could cope with or afford. One of the most annoying things about being vegan is coffee. No seriously, it is. As an adult, you take for granted the fact that you can make your own instant coffee. It's not hard is it? Well... I've lost count of the number of cups I've had to throw away because the soya milk curdled. Plant milks, and I mostly drink soya, have a nasty habit of curdling in hot coffee and you really can't drink it once that has happened - seriously, don't, it's gross. It looks bad, tastes sour and gives you indigestion. I made it my mission to find a method to make instant coffee at home without the curdling, and I'm going to share my secrets with you today.
